I think you need to utilize more flee/murders to increase your damage output vs Uvet. I think you raged a bit too early which sacrificed alot of your own defense hence being out-damaged.
As well after you berserked you kind of just stood there...rake/roar/etc. would have helped.
Axes are good on damage, but only has bonus' on overcoming on shield block.

0 , 0 , 0 . You need to make use of thunderclash to send her charmies scattering in directions. Catch her in her pickup of said charmies via murders or headbutts, which I think now you can initiate with? Idk. If you ever see her unsanced though, rage, berserk, warcry will end her.
