Only one thing, which isn't big but might confuse a newb is the zapping and brandishing, and them not being associated with wand or scroll, maybe make sure it's known to be in respective order, or in parentheses next to the item: wand (zap). Otherwise, excellent job!

I almost don't understand the parry chart. If it's five stars in offense, does that mean it's harder to parry? And if it has five stars in defense, does that mean it's easier to parry with?

I figure that's the case because whip is 5 in offense and 1 in defense, but it might be nice to explain that a bit.

No the stars in offense just refer to how much damage those types of weapons typically do. The defense rating is how well they parry. Using the staff vs whip as an example, the staff has three stars for offense meaning it tends not to do the damage like a whip. It has five stars in defense because it is the best parrying weapon in the game. The whip has five stars in offense though because it does a lot of damage, but only one star in defense cause, let's face it, you just can't parry with a whip.

I'm almost positive on that, but if I'm wrong please someone correct me.
